Yummy!

So I saw on someone's blog that they had a yummy recipe and last night I was making one of my favorite dinners and thought I would share it with everyone. HA! It's chicken nuggets, but a little healthier. At least I think so.

Jena's Chicken Nuggets
Chicken cut into strips or chunks
Grape Nut Flakes (amount depends on how much chicken, start maybe with 2 cups)
2-3 Tbls Grounded flax seeds
2-3 Tbls (or more if you have a lot of chicken) Season of choice- I like Ranch powder or Grizzly Joe's Tequila Lime (My FAVORITE season!)

Crush the grape nut flakes in a bag, then add the flax seeds and season. Mix well. Put the breading in a bowl. Then dip the chicken into an egg mixture, then the breading.
Cook in a pan with a little oil.

Yummy! I love this! I hope that you will too. You can switch the grape nut flakes or corn flakes or rice crisps. This is really easy and fun!

Hey Jena! I haven't talked to you in a while, but I saw you completed your big marathon! GOOD FOR YOU! I don't think I could ever do that. It would take a lot of time and dedication to practice and actually compete, so I'm impressed! Hope all is well w/ you and your family!
