Creativity in the Kitchen


I'm always trying to think up new ways to get the girls to eat new vegetables or old ones for that matter. One day for lunch they were eating these curried lentils and I added to the plate squash "chips". Sounds exciting right? They are. The most exciting part is how easy they are. Just raw sliced yellow squash. I loved seeing the girls put their lentil mixture on the chips and taking a big bite.
This has become our new love. We now use these to also eat hummus. Couldn't think of a healthier or tastier snack!

Love it! We eat a lot of lentils around here but I've never done the "squash chips!" You are brilliant!!
